Spaghetti with Cockles

Ingredients

• Natural cockles
• Cantabrian anchovies 
• 200g Spaghetti
• 1 Vine tomato large, diced
• 1 Clove of chopped garlic
• 1 glass of White wine
• Capers 
• Parsley 
• Olive oil

Step-by-Step Guide

STEP 1:
Boiled the spaghetti just shy of al dente and set aside.

STEP 2:
Heat up a good splash of olive oil in a pan over medium heat. Sauté the chopped garlic without browning it too much. Add the anchovy fillets, mixing well so that they fall apart. Add the diced tomato and stir well. Add a glass of white wine. Increase the heat until the alcohol evaporates.

STEP 3:
Add the previously boiled spaghetti for 4-5 minutes. Add the cockles in their juice and a handful of capers and parsley. Mix everything and cover.

STEP 4:
Turn off the heat and let it rest for 5 minutes to finish cooking.
