Ingredients

• Natural mussels
• Garlic, 1 clove
• Chives, 1 pc
• Ripe tomatoes, 2 pcs
• Coconut milk
• Lime, 1 pc 
• Red curry paste
• Black pepper
• Cilantro

Step-by-Step Guide

STEP 1:
Cut a clove of garlic and chop the spring onion into small cubes. Set aside.

STEP 2:
Pour olive oil into the pan and fr the garlic and spring onion. Add in the red curry and stir.

STEP 3:
Add the crushed tomato and the juice from the mussels. Pour in the coconut milk, mix well and then add in the mussels. Squeeze some fresh lime juice in and lime zest and black pepper.

STEP 4:
Chopped some the cilantro and add into the pan to garnish. Serve with rice, bread or chips.
