Cockle Casserole With Mushrooms

Ingredients

• Natural cockles
• Assorted mushrooms
• Extra virgin olive oil
• 2 cloves of garlic chopped
• Chopped parsley
• White pepper
• Dried romesco pepper
• Apple cider vinegar

Step-by-Step Guide

STEP 1:
Fry the chopped garlic in a pan with extra virgin oil. Add in the chopped pepper and stir fry until the garlic turns slightly brown. Pour in the apple cider vinegar.

STEP 2:
Open a can of Espinaler natural cockles. Add 4 tablespoons of the juice. Slice the mushrooms and add them into the pan. Add ground white pepper.

STEP 3:

Place the mushrooms on to a plate and pour the remaining sauce in the pan into a blender. Whisk it until you get a creamy sauce then add the parsley into the sauce.

STEP 4:
Place the cockles on the plated mushrooms and pour the sauce over.
