Clam and Mussel Risotto
Ingredients
• Natural mussels
• Natural clams
• Cantabrian anchovies
• Arborio or carnaroli, 250g
• Chive, 1 pc
• Fish broth, 1L
• White wine, 1 glass
• fresh basil leaves
• Butter, 30g

Step-by-Step Guide
STEP 1:
Pour the fish broth into a saucepan
and add in the juice from the clams and mussels. Heat up the broth.
STEP 2:
Pour the rice into a pan and toast. Remove the rice and add in olive oil.
STEP 3:
Fry some garlic and an anchovy. Remove the garlic when it is golden. Add the spring onion, a pinch of salt and toasted rice.
STEP 4:
Pour in a glass of white wine and the broth and stir. Add mussels, clams and butter. Serve when the rice is cooked. Garnish
with some basil.
