Bean cream with scallops
Ingredients
• Half a leek
• Medium sized onion
• Vegetable broth
• Olive oil
• Salt and black pepper

Step-by-Step Guide
STEP 1:
Cut the leek into small pieces. Drain the jar of beans and set aside.
STEP 2:
Chop up half the onion. Pour olive oil into a saucepan over medium heat.
STEP 3:
Add the leek and the onion. Stir well and sauté them.
STEP 4:
Add in the Espinaler beans. Mix everything together with a little of the vegetable broth and stir well.
STEP 5:
Pinch of salt and pepper to taste and let it cook for about 5 minutes
STEP 6:
Blend everything with the blender to a fine cream. Serve the cream on the base from the plate and add the scallops. Garnish with lamb\’s lettuce and the Galician sauce from the can itself.
