Asparagus and Anchovy Cream
Ingredients
• White asparagus
• Anchovies in olive oil
• Cooking cream (150 ml)
• Olive Oil
• Black pepper
• Salt
• Chives

Step-by-Step Guide
STEP 1:
Drain a jar of asparagus and reserve 2 for plating. Put the rest in a blender glass.
STEP 2:
Add pepper, salt and 150ml of cooking cream. Beat until you get a cream.
STEP 3:
Cut the chives very finely and set aside. Mix a tablespoon of olive oil and reserve.
STEP 4:
Arrange the cream as a base on the plate. Place pieces of the asparagus previously reserved.
STEP 5:
Add 2 anchovy fillets, olive oil and the olive oil mixture. Decorate with chives.
